Delicious, nutritious vegetable soup

Ingredients

Leeks, Carrots, Potatoes, Cabbage, Kale, any other veg you fancy, lentils, vegetable stock, oil, salt, pepper

 

Method

  • Cut the leeks in half lengthways and then chop widthways into small chunks. Pop these in the pan and start sweating them on a low heat with a bit of oil and water, keeping the lid on so the steam stops them sticking to the bottom of the pan.

  • Cut the carrots, chuck 'em in, cut the potatoes into small cubes, chuck 'em in, and continue doing this with all the veg (starting with the ones that are the hardest and take longest to cook). Keep the lid on and a small amount of water at the bottom of the pan as this steam helps to cook and soften them before the stock goes in.

  • Add the stock cube(s), salt/pepper, and the lentils and stir everything around so it's all mixed in together.

  • Add boiling water and fill up the pan. Leave to boil for the length of time it takes for the potatoes and carrots to go soft. Serve with some tasty bread or oatcakes with cheese!

  • Experiment with different ingredients, herbs, flavours and textures - let your senses tell you if it smells, looks and tastes good!
